- Once the grits start to thicken add in cheese and cook for another 2-3 minutes until cheese has melted and grits are at desired thickness. Be sure to turn the heat down to medium-low and constantly stir the grits until the cheese has melted completly.
- While the grits are cooking, in a seperate pan add butter and melt on medium-low heat.
- In a bowl season shrimp with below seasonings.
- Once butter has melted add in saffron and stir for 30 seconds before adding in the shrimp. Cook on medium-high heat for 5 minutes, or until shrimp has cooked through and is pink. Then toss in green onions, and remove from heat.
- Serve grits topped with shrimp and a sprinkle of cayenne pepper!
