  15. 2 big onions finely chopped
  16. 4-5 tomatoes chopped
  17. 2 green chillies
  18. 1/2 inch ginger piece
  19. 7-8 garlic cloves
  20. 2 tbsp fresh cream
  21. Pinch asafoetida (hing)
  22. 1/2 tsp jeera
  23. 2 pinch ajwain
  24. 1/2 tsp turmeric powder
  25. 1 tsp red chilli powder
  26. 1 tsp coriander powder
  27. 1/2 tsp garam masala

Instructions to make to make Arbi Kofta

  1. First boil the arbi and remove the peel.
  2. Mash arbi add chilli, ginger, besan, maida, corn flour, chilli powder, ajwain, jeera, and 1/2 tsp salt. Mix well to make soft dough.
  3. Then heat oil in the frying pan add small ball (kofta) of the dough and deep fry till it turns golden brown.
  4. In a mixture jar add tomato, green chillies, garlic, ginger and make puree.
  5. Now heat 2 tbsp oil in the pan add pinch of hing, jeera, ajwain and onion. Cook till it turns light brown.
  6. Then add turmeric powder, chilli powder, coriander powder, garam masala and salt as per taste and cook for a minute. Then add tomato puree and cook until oil is released.
  7. Then add cream and cook till oil is released. Now add 2 1/2 glass of water and cook until it boils.
  8. Then add koftas and cook 5 - 7 minutes on high flame until the gravy gets thickened.
  9. Ready to serve arbi kofta with garma garam phulka or paratha.
